Extraction procedure
- One process involves dehydrating avocado shavings by heating and extracting the oil by pressure or solvent.
- The second method, centrifuging the pulp, enables extraction at low temperature, thus preserving the oil's qualities. The result is a clear, bright green oil with remarkable characteristics.
- The best quality is obtained from avocados harvested when ripe and processed into oil immediately on the spot to prevent browning and acidity. Around 10 kg of avocados are needed to obtain 1 liter of oil.
